Limoncello (Tom) Collins

A fresh twist on the Classic Tom Collins. The original  Collins was most likely named after 19th-century bartender John Collins of London's Limmer's Hotel. The Tom Collins was originally made with Old Tom, a sweet style of gin that's extremely hard to find today.


  • 2 ounces limoncello
  • 1 1/2 ounces gin
  • 2 ounces fresh lemon juice
  • 2 ounces club soda



Pour the limoncello, gin and lemon juice into a mixing glass. Press three very thin lemon slices against the side of a collins glass, and add ice. Pour the mixture from the drinking glass over the ice. Top with the club soda, add a mint for garnish, and serve.
